Apparently 40% of all hospitality waste is catering waste = expensive waste

I have been monitoring our waste a lot lately and this is not the case for us. I already have trouble getting enough compostable waste out of the kitchens as it is to service my homemade “wormery and composter” (basically a long barrel, with fins in to slowly move the material down to the exit where compost comes out, commercial ones were a lot of money, last quote3 I got was £8K).
